Ingredients:

  • 2 cups mixed vegetables (carrots, beans, potatoes, peas, cauliflower, etc.)
  • 1 onion, finely chopped
  • 1/2 cup grated coconut
  • 2-3 green chillies
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 cup tomato puree
  • 2 tbsp oil
  • Salt to taste
  • Water as required

For tempering:

  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1-2 dried red chillies
  • A few curry leaves
  • 1 tbsp oil

Instructions:

  1. Wash and chop all the vegetables into bite-size pieces.
  2. Grind the coconut and green chillies to a fine paste, adding a little water if required.
  3. Heat oil in a pan and add cumin seeds, fennel seeds, and ginger-garlic paste. Saute for a minute or until the raw smell disappears.
  4. Add the chopped onions and saute until they turn translucent.
  5. Add the mixed vegetables and saute for 3-4 minutes.
  6. Add the coriander powder, turmeric powder, red chilli powder, and salt. Mix well.
  7. Add the tomato puree and cook for 2-3 minutes.
  8. Add the ground coconut paste and mix well.
  9. Add enough water to cover the vegetables and bring the mixture to a boil.  Reduce heat and let the curry simmer for 10-12 minutes or until the vegetables are cooked.

In a separate pan, heat oil for tempering. Add mustard seeds, cumin seeds, dried red chillies, and curry leaves. Fry for a minute and pour the tempering over the curry.  Give a good mix and switch off the flame.  Your delicious and flavorful vegetable kurma is ready to be served.
