Sambar Recipe

Ingredients:

  • 1 cup toor dal (split pigeon peas)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 carrots, chopped
  • 1 potato, chopped
  • 1 drumstick, chopped (optional)
  • 1/2 cup chopped mixed vegetables of your choice (such as beans, cauliflower, okra, eggplant, etc.)
  • 2-3 green chillies, slit
  • 1 tablespoon tamarind pulp
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon sambar powder
  • Salt to taste
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon fenugreek seeds
  • A pinch of asafoetida
  • Curry leaves
  • Coriander leaves for garnish

 Instructions:

  1. Wash the toor dal and soak it in water for 30 minutes. Drain the water and add the dal to a pressure cooker with 2 cups of water, turmeric powder, and a pinch of salt. Pressure cook for 3-4 whistles, or until the dal is cooked and soft. Set aside.
  2. In a separate pan, heat oil over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. When the seeds start to splutter, add the chopped onions and green chillies. Fry until the onions turn translucent.
  3. Add the chopped tomatoes and fry until they turn soft and mushy.
  4. Add the chopped vegetables, sambar powder, red chili powder, and salt. Mix well and fry for a few minutes.
  5. Add 2-3 cups of water and bring the mixture to a boil. Reduce the heat and simmer for 10-15 minutes, or until the vegetables are cooked.
  6. Add the tamarind pulp and mix well. Simmer for another 5 minutes.
  7. Mash the cooked toor dal and add it to the sambar. Mix well and simmer for another 10 minutes, or until the sambar thickens.
  8. Finally, add a pinch of asafoetida and curry leaves. Mix well and turn off the heat.
  9. Garnish with coriander leaves and serve hot with rice, idli, or dosa.
